The most important room for me is the kitchen. These are just concepts, but I would like a huge pantry with lots of shelves and room for a small freezer. I would like a possible smaller room off of the kitchen with a extra sink, a counter, cabinets above and below, possible room for a small washer and dryer, and small closet-type room with a toilet.

I think we should try to stick to your goal of 3,500 s.f. (we can make it bigger later if need be) - but that will likely mean that the Crafts Room (which I have on the Main Level) - will also need to function as the Guest Room. There will be more rooms upstairs however. We can go over this in the meeting but I think you'll like this downstairs room and its access and location to the yard :)
Thoughts. On the ground floor I'd like a guest room with a nice bathroom. Dave and I were even thinking about something like a small studio apartment. Just a thought. But I'd definitely like a craft room on the first floor with maybe laminate-type flooring in case of paint or glue spills. Maybe a sink in there too. What the heck, why not?

Upstairs I would like two separate toilets in their own little room with a door in our master bathroom.
And in the kitchen, I would lots of space with a large island, an ample amount of counter space with lots of cabinets with shelves. I'd like the island to accommodate at least 4 bar stools.
